A revitalizing cépage of Semillon and Sauvignon Blanc, Riesling, Chardonnay and Pinot Gris, from fine vineyards in Eden Valley and the distinguished Henschke Lenswood property at Adelaide Hills. This adroitly, hand chosen kaleidoscope of parcels is fashioned into a seamless wine, of stunning bouquets and engaging palate, named in honour of great aunt Ottilie Mathilde Henschke. Like the many remarkable women of an era when daily life was a far cry from the ease of today, she grew her own produce while raising a large family.

A pure varietal wine from grapes grown by David and Annette Innes at Littlehampton. Viticulture was first established in the Adelaide Hills in 1839 by John Barton Hack at a place near Mount Barker, just five kilometres from Littlehampton. It has been recently rediscovered as a winegrowing area. Littlehampton is an ideal site to practice organic viticulture, and responds well to biodynamics for keeping the vines healthy. Pinot Gris has been well received by the soils and climes here, where it ripens to plump varietal flavours and a judiciously crisp acidity.

Two thirds Semillon grown to Henschke vineyards on Eden Valley, vinified around a solid backbone of topical Adelaide Hills Sauvignon Blanc from the distinguished Henschke property at Lenswood. Named for Eleanor Hill who married George Crossman Thyer in 1848, the grower who pioneered and developed Henschke's original Eden Valley site. Rich, spicy citrus flavours line the palate, crisp acidity, fine length and exquisite balance, take Eleanor out for the freshest fish or lightly spiced Asian faire.

Grown to the the Henschke Archer's Vineyard at Lenswood in Adelaide Hills, near the heart of the South Mount Lofty Ranges. A refreshing passionfruit, citrus and gooseberry nuanced wine with flinty mineral aromas following up, Coralinga is a highly regional expression of Sauvignon Blanc, delivering ample varietal complexity and true elegance.

A voluminous, golden oaked Chardonnay from a precious block of superior vines, treated to the luxury of a year's maturation in a rich proportion of new French barriques. A beautiful bouquet like an Adelaide Hills spring in full bloom, the peaches, melons and nectarine of early morning market garden, the fragrant saute of leeks in warm butter. Redolent of the succulence and chantilly from good French oak, its serious palate weight and volume of fruit, making a multi dimensional Chardonnay style to match robust white meats, Veau au vin blanc and crispy crackling pork.

Thomas Hardy left Devon at the age of twenty and immigrated to the colony of South Australia, where he established a winery on the banks of Adelaide's River Torrens in 1853. The Tintara wineworks in neighbouring McLaren Vale have since become the home of Hardy Wines, but Adelaide Hills have never been far off the estate's radar. The quality of Sauvignon Blanc here is world class, recognised internationally. Oomoo has returned to exploit the high quality harvests, fashioning a vibrant regional wine with picquant fruit and enticing aromas.

Since it's inaugural release in 1993, Grosset has made a powerful statement about the potential of Piccadilly Valley, an Adelaide Hills subregion that's so cool, it is often considered marginal for wine. It's an area that takes time to understand but the wines can be exquisite. Piccadilly is deliberately restrained. Succulent white peach, melon and grapefruit characters create a mineral, focused wine that's fresh and refined.

Grant Burge is a fifth generation vigneron and one of Australia's most industry respected winemakers. He retains an intimate knowledge of Barossa vineyards and is well positioned to select the pick of Chardonnay from the choicest cool climate sites. A large portion is sourced from Burge's own Summers property in Eden Valley, a further component is picked off vines planted to higher altitudes in Adelaide Hills. Subtle oak treatments play a role, imparting depth and framing the fruit while supporting the fine palate structure.

A wine of limited production and suitably high demand, fashioned from the distinguished vineyard of Dennis and Val Kraft at Tanunda, which consistently delivers an impeccable quality of fruit with balance and definition. Treated to a long cool ferment, a third of the wine is sent to seasoned French oak barrels for vinification and a spell of maturation on gross sediments, infusing textural richness and mouth watering complexity. Sweet, spicy pear flavours, baked cheesecake and shortcrust characters, complemented by the piquancy of nutmeg, cinnamon and pinenut. Barossa Valley is unique in that it offers a synergy of climactic factors and terroir, ideally suited to vintages of white wine characterized by their softness, elegance and finesse. Grant Burge can trace a family history in Barossa viticulture which dates back to 1855, he is friends with the best growers and retains access to the choicest fruit. The Adelaide Hills were home to the earliest commercial vineyards in the colony, they remain home to our nation's most distinguished vineyards and yield parcels of the most exquisite Pinot Gris in the nation.

The Burgundian style of Chardonnay, vinified from choice parcels of Adelaide Hills fruit, artfully oak barrel fermented for palate weight and complexity, mouthfilling, structured and refined. A prominent nose of grapefruits and peach, its mealyness and saline savouryness are supported by apple custard creamyness, lees autolysis and tight mineral backbone. Estella Floris Willis was a pioneer and clan matriarch who loved good wine, her brood took up viticulture in the greater Geelong region and established the Australian icon brand known as Scotchmans Hill.

Like its Rhone Valley siblings, Adelaide Hills Viognier is a wine that drinks well on release, evolving as it grows in complexity. Named after a site which lies at the bottom of a gully in McLaren Vale, the Last Ditch was originally planted to a small block of Doradillo vines during the 19th century. In 1995 the site became repopulated by Viognier. Last Ditch is a highly auspicious wine which receives the very best barrels of d'Arenberg Viognier, it simply blossoms on the palate and continues to linger.

You'll see plenty of olive trees alongside the d'Arenberg roadsides, flourishing among the vines. McLaren Vale is littered with olive groves which were planted by the first settlers. While neighbouring table grape growers consider olive trees a nuisance, local winemakers are thankful for the bittersweet nuances which the tiny green stonefruits impart to the wine. Chester Osborn determines the critical time of picking his Chardonnay, which is treated to wild ferments and lees stirring, for a rich textural wine with savoury aromas and good palate complexity.

Chapel Hill's mantra is to produce wines with pure varietal and regional characters. Black Thursday Vineyard played a role in extinguishing some nasty bushfires which threatened the Adelaide hamlets of Kuitpo and Gumeracha. Cheers were raised and there were many thanks given, but nothing could save chilled bottles of Chain of Ponds Sauvignon Blanc from the tired and thirsty firefighters. Consider this drink to be something quite the opposite of a parched and arid flame, think of green grass, iced kiwi fruit, cool cucumber and asparagus. The generously proportioned, big boned, leesy French oak genre, Dijon Bernard Clones 76 and 95, harvested off fully mature vines, thirty years of age at Charleston in the Adelaide Hills. Grapes are destemmed and pressed for vinification on gross solids before transfer to French oak hogsheads for completion of ferments, in the old world way. Treated to lees stirring and partial malolactic for textural opulence and palate richness, its creamy grapefruit nougat palate will appeal to enthusiasts of the medium to full bodied white meat styles of Chardonnay.

A derivative of Traminer, Savignin and Pinot Noir, Grüner Veltliner was only recently reconsidered as a consequential table wine when it outclassed all comers at a prestigious international competition, against the great growths of Burgundy. Grüner Veltliner is the favourite tipple amongst the bohemian habitants and twilight denizens of Vienna, an animated style of appeal and panache, its piquant white pepper spice and nashi crispness, resolves on a long mineral finish, leaving the palate clean, revitalized and refreshed.

Black Chook is a collaboration between maestro Ben Riggs and Tony Parkinson, proprietor of the salubrious Penny's Hill. Grapes are sourced from the Tomich property at Woodside in Onkaparinga Valley, a family owned and operated vineyard which yields the quality of fruit which has brought Adelaide Hills such renown. Single vineyard Pinot Grigio from a superlative block of vine at Kuitpo in the southern Adelaide Hills.
